Description
In 1995, Michel Troisgros and his wife Marie-Pierre opened a "café-restaurant-grocery" next to Maison Troisgros, their three-star restaurant in Roanne. The memory of Italian "salumerie" inspired them to design this simple, elegant venue serving precise, home-inspired cuisine (“Onion and porcini tart”, " Flat omelette soufflé with fourme cheese") that also includes souvenirs of travels ("Fish & chips, sauce indienne" or "Ceviche de daurade"). High-quality products are also sold, such as judion, an enormous white bean discovered in Seville's tapas bars and the ingredient of choice for "Rabbit livers with artichoke". This book is based on this culinary repertoire, and offers 81 recipes to take home the warm atmosphere of Central and try your hand at a cuisine nourished by savoir- vivre.
